In the spirit of eating whole resolution, I plan to bring in some simple recipes which celebrate wholeness. Today’s recipe is a simple but tasty soup enjoyed by my whole family.
Pumpkin is commonly found in the whole country. It is a powerhouse of vitamins, anti-oxidants and minerals.
Pumpkin has a very high concentration of Beta carotene which gets converted to Vitamin A in the body. Vitamin A is a powerful natural anti-oxidant and is required by the body for maintaining the integrity of skin and mucosa. It is also an essential vitamin for good visual sight. Research studies suggest that natural foods rich in vitamin A may help human body protect against lung and oral cavity cancers.
It is a good source of B-complex group of vitamins like folates, niacin, vitamin B-6 (pyridoxine), thiamin and pantothenic acid.
It is also rich source of minerals like copper, calcium, potassium and phosphorus.
RECIPE:
Ingredients
- Pumpkin: 250g
- Butter/Ghee: 1 teaspoon
- Spring Garlic/Onion: 1 bulb
- Black Pepper: To taste
- Salt: To taste
Method
Peel,cube the pumpkin and cook till it is soft. Once it cools down make a puree and keep it aside. Heat butter or ghee in a pan and add finely chopped spring garlic or onion. Sautee for a few minutes and add the pumpkin puree. Dilute with water to the consistency that you prefer. Once the soup starts to boil,add salt and freshly crushed pepper to taste. Serve hot.

The soup contains around 40 cals per serving and 6202 I.U of vitamin A.
